Coping with Cookies

It has been a stressful few weeks, with COVID-19 taking the center stage and rattling many of our lives. It’s been hard to be creative as staying home is starting to become the new normal. One way I have always found a creative outlet is through baking, which also keeps me indoors, thanks to my baking hoarding habit, I always keep some ingredient mainstays on tap. 

The real secret of this recipe revolves around the applesauce. It acts as the bonding agent, and at the same time, makes for an incredibly moist cookie that tastes fresh even after days (if they last in the house for that long!!). Another bonus is that all of the ingredients are also vegan, but you can modify it to also include toffee, sea salt caramel, or whatever else you have in your pantry and want to add. If you really want to get wild, I also suggest grabbing your favorite ice cream and adding a scope on the top of a fresh out of the oven cookie. :drool:

Vegan Chocolate Chip Cookies 

(Makes about 16 cookies) 

 

½ cup coconut oil (NOT melted)

1 ¼ cup light brown sugar

2 teaspoon vanilla extract

¼ cup unsweetened coconut milk

¼ cup unsweetened applesauce

2 ¼ cup flour

1 teaspoon baking soda

½ teaspoon salt

2 cups chocolate chips

Pinch sea salt

 

  1. Preheat oven to 375 degrees. 
  2. Using either a stand or hand mixer, mix the coconut oil and light brown sugar until incorporated, then add the wet ingredients. Mix until well blended.
  3. Add all of the dry ingredients, except for chocolate chips. Mix everything together until you get the right cookie dough consistency, then add in chocolate chips and mix until they look nice and incorporated.
  4. Using a cookie scoop, scoop out the dough and align on a baking sheet, giving about an inch of room between cookies.
  5. Bake for 9-10 minutes.
